Artichoke & Spinach Dip
 
8 slices of bacon
10oz package thawed, chopped and drained spinach
14oz can quartered artichokes (drained)
5oz container garlic-flavored cheese spread
1 cup grated parmesan cheese
8oz cream cheese
1/2 cup mayonnaise

preheat the oven to 400F /  200C
cook and crumble bacon
mix spinach, artichokes, cheese spread, parmesab cheese, cream cheese and mayo in bowl with bacon
scoop into 7"x11" baking dish
bake for 20 minutes
 
garnish with chopped tomatoes, olives, or herbs if you like.
 
This recipe makes 48 servings.
77 calories / 7g fat / 2g protein per serving.
...for those of you who are counting. The one thing I missed is how much a serving equals. In a 7x11 dish it can't be much, maybe a couple of tablespoons, so I guess it could add up... I hope ya'll enjoy.

DIY Trail Mix
 
I usually just buy some roasted peanuts, some raisins, and a big bag of M&Ms, then I mix it all together and put it in containers or little baggies. 
Other things you might include would be cashews, almonds, seeds, dried fruit such as cranberries or apricots, shredded coconut, or more sweetness from semi-sweet chips or Reese's Pieces. 
I like this snack because it is the perfect combo of salty and sweet, it isn't messy to eat, and it is pretty good for you too (with lots of calories).  The great thing about making it yourself is that you can customize it to your own tastes, and it's a lot less expensive :)

Sweet Potato Fries
 
This is one of my favourites. It takes little time and is sucha  healthy and realyl tasty variation on regular baked sweet potatoes with marshmallows.
 
2 Large sweet potatoes
olive oil
salt and pepper
garlic powder
paprika
rosemary

Preheat oven to 400F / 200C. Wash and cut up the potatoes. I leave the skin on, I think they are better that way! Place on an oiled cookie/baking sheet. Sprinkle with the spices (to taste) and drizzle with a drop of olive oil (you could use canola as well). Toss them to distribute the spices. Bake 30-40 minutes until brown and crispy. Depending on the size of your fries, it could take longer or shorter. Enjoy.

These are great dipped in chili ketchup- just mix regular ketchup with some chili powder or your favorite zesty spice. It's like gourmet french fries.

Quick Banana Milkshake

This one is especially quick because it doesn't contain any icecream.

Peel a banana, put it into a blender, add a cup of milk (whole milk) and acouple of teaspoons of sugar and blitz until you have a smooth, foamy drink. Enjoy!
